Why the same label can eat differently
Frozen desserts are multi-phase structures. Research descriptions of ice cream commonly identify ice crystals, air bubbles and an unfrozen continuous phase, with fat and protein structures contributing to body and stability. Change the relative amounts, processing or temperature and the spoon meets a different structure—even when the flavour name stays the same.
Air incorporation affects apparent density and melt behaviour, but “less air” is not automatically better. Too much air may make a flavour seem diffuse; too little can contribute to a heavy or gummy result. The target belongs to the recipe and the experience the maker intends.

“Real gelato contains no air.”
Freezing and churning normally introduce air. The amount and bubble structure vary. A completely airless frozen mass would not produce the familiar eating experience associated with churned frozen desserts.
“Sorbet is automatically safe for a milk allergy.”
A traditional fruit sorbet may have no dairy ingredient, but recipes, inclusions, equipment and cross-contact controls differ. Safety needs current information for the specific food and setting.
