How to taste gelato properly

Gelato rewards attention. This five-step method helps you notice more and compare flavours fairly.

  1. Look. Natural pistachio is usually a muted, brownish green. Neon colour is not evidence of quality either way, so treat it as a prompt to read the ingredients.
  2. Smell. Aroma carries much of flavour. Take a short sniff before the first spoonful.
  3. Texture. Let a small amount melt on your tongue. Is it smooth, airy, icy or sticky?
  4. Flavour. Notice the first impression, the middle, and whether it tastes of the real thing.
  5. Finish. How long does it last, and is it clean or cloying?

Fair comparisons

Taste lighter flavours (fior di latte, lemon) before stronger ones (chocolate, coffee), and sip water between samples. Try the same base flavour, such as vanilla, at different shops: it shows differences clearly.

A simple note format

Flavour · Texture (1–5) · Sweetness (1–5) · Finish · One sentence. Keep your notes, and your own palate becomes your best reference.
